We have recently had the opportunity to have dinner @ FINDS, Hong Kong’s pioneer of Modern Northern European Cuisine.

FINDS is an acronym for Finland, Iceland, Norway, Denmark, and Sweden – the collection of countries that inspired its menus and design.

The modernist decor and menu of updated Northern European classics attract a clientele of design-minded locals and stylish travelers.

The delicious Autumn Menu, especially crafted by Executive Chef Jaakko Sorsa, features “Perch & Porcini.”

The clean flavour of perch, a popular panfish for its white meat and low fat levels, is contrasted against the dark and intense porcini.

The earthiness of the autumnal fungus is underscored by a delightful fricassee of Savoy cabbage and marinated tomato.

Succulent seabass, sea scallops and yellowfin tuna are also featured strongly.

Chef Jaakko emphasizes clean and honest flavours by applying old fashioned handiwork and respect for these premium ingredients.

Autumn also brings the pleasure of the exotic Kurobuta Pork Chop.

Imported fresh from the Snake River Farm in the United States, Chef Jaakko highlights the supple, meaty and lush flavours by slow roasting every well marbled cut of meat.

A thoughtful condiment made of caramelized fennel and braised red cabbage give the dish a uniquely Scandinavian flavor.

The dish comes together with pork chop’s perfect companion – green peppercorn sauce.

Other highlights of the Autumn Menu include French Guinea Fowl and FINDS’ Signature Venison Tenderloin.

Autumn’s favourite fruit, the apple, also makes an appearance via a heavenly triffli layered with apricot brandy cream, almond crumble and burned Italian meringue.
